Hello, I’m Neuza, welcome to SaborIntenso. Today I’m going to make some Muffins that are perfect for this time of year, especially for Halloween. I’m going to make Pumpkin Spice Muffins with Nutella. To make this recipe I will use the following ingredients: 170 g of butter pumpkin, raw, cut into cubes 60 g of cold butter 2 large eggs 80 g of brown sugar 50 g of honey 1 small packet with 7.5 g of vanilla sugar 1 spoon heaped tablespoon of grated dry coconut 1 teaspoon of ground cinnamon 1 teaspoon of nutmeg 1 teaspoon of ground ginger 1 pinch of salt 160 g of unleavened T55 wheat flour 1 teaspoon of baking powder 1 teaspoon of baking soda 80 g of walnut kernels, broken into small pieces Nutella Crimped paper molds In a pan with a little boiling water, cook the pumpkin for 10 to 15 minutes. When the pumpkin is well cooked, remove it with a slotted spoon and let it drain very well. In a bowl, place the pumpkin and pass it with a hand blender until it becomes puree. Add the butter and stir with a spatula until it melts. Add the broken eggs, brown sugar, honey, vanilla sugar, cinnamon, ginger, nutmeg and a pinch of salt. Stir very well with a wire whisk until it becomes a homogeneous cream. Add half the flour and continue stirring with the wire whisk. After everything is well mixed, add the remaining flour, grated coconut, baking powder and baking soda. Stir very well with the wire whisk until it becomes a homogeneous mass. Finally, wrap the nuts in the dough. Place the crimped paper cups inside silicone or aluminum muffin tins. Divide the dough between the 12 molds. If you want to fill the muffins with nutella, place a teaspoon of nutella over the dough and stir carefully with a wooden spatula (or a toothpick). If you prefer to use nutella as a topping, reserve it for when the muffins are cooked. For those with a sweet tooth, you can stuff and cover with nutella. Place in the preheated oven at 180’C (365’F) and bake for 15 to 20 minutes. Once the muffins are cooked and browned, remove them. After the muffins have cooled and with the help of a pastry bag, decorate with nutella as desired.
